Cherry Almond Muffins

Bake ahead for a healthy breakfast on-the-go.

Ingredients

  • 1 1\/2 cups all-purpose flour
  • 1\/2 cup sugar
  • 1 teaspoon baking powder
  • 1\/2 cup milk
  • 1\/4 cup applesauce
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1\/2 teaspoon almond extract
  • 1 cup Chukar® Sour Cherry Preserves
  • 1 cup sliced almonds
  • Turbinado sugar, for garnish

Directions

Preheat oven to 400° F.
In a medium mixing bowl, stir together all ingredients except Chukar® Sour Cherry Preserves, sliced almonds, and turbinado sugar. Mix well.
Fold in 1\/2 cup sliced almonds, being careful not to over mix.
Spoon batter into well-greased muffin tins, filling the cups 1\/2 full.
Spoon a teaspoon of Chukar® Sour Cherry Preserves into the center of each muffin cup, then spoon more muffin batter on top so the cups are about 2\/3 full.
Sprinkle sliced almonds and a pinch of turbinado sugar evenly over the muffins.
Bake for 18-20 minutes or until golden.
