Cherry Pie Bars
Baking an entire cherry pie can feel like a big project. , whereas these Cherry Pie Bars deliver all the flavor with half the effort. Whip up a quick dough, which serves as the crust and topping for these treats. After that, all that’s left to do is assemble the bars with a generous helping of Chukar® Sour Cherry Pie Filling. Use Chukar® Triple Cherry Pie Filling for a sweeter treat or try a mixture of the two.
Ingredients
FOR THE BARS
- 2 sticks unsalted butter, softened at room temperature
- 1 ¼ cups granulated sugar
- 1 egg
- 2 ½ cups all-purpose flour
- ½ cup old-fashioned oats
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 ½ cups (1 jar) Chukar® Sour Cherry Pie Filling
FOR THE GLAZE
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon almond extract
Directions
Make the bars:
Preheat the oven to 350°F. Grease a 9x13-inch baking pan. Line the pan with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 3 minutes. Mix in the egg.
In a small bowl whisk together the flour, oats, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the creamed mixture until the dough comes together.
Reserve 1/2 cup of the dough and press the remaining dough into an even layer in the baking pan. Spread the Chukar® Sour Cherry Pie Filling on top.
Break the remaining 1/2 cup of dough up into small pieces and sprinkle it evenly on top of the pie filling. Bake the cherry pie bars for 30 to 35 minutes until the top is lightly golden. Allow the bars to cool and set in the baking pan (at least one hour) before slicing and serving.
Make the glaze:
In a bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Drizzle over the cooled pie bars.
