Chukar Cherry Cheesecake
Classic and delicious!
Ingredients
- Nonstick cooking spray
- 8 low-fat graham crackers
- 1 tablespoon oil
- 3 cups low-fat (1%) cottage cheese
- 8 ounces cream cheese, at room temperature
- ¾ cup + 2 teaspoons sugar
- ½ cup sour cream
- 4 large eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon pure vanilla extract
- ½ teaspoon salt
- Chukar® Cherries Jubilee
Directions
Coat spring form pan thoroughly with cooking spray and preheat oven to 325°F.
Crush graham crackers into fine crumbs.
Mix in 1 tablespoon oil and press firmly into the bottom of spring form pan.
Bake 15 minutes.
While crust is browning, mix together cottage cheese and cream cheese in a food processor until smooth.
Mix in sugar, sour cream, eggs, flour, vanilla, and salt and blend well.
Pour cream cheese mixture into warm crust and bake 1 hour (until center is set).
Let the cheesecake sit in turned-off oven for an hour before cooling on a baking rack. Once the cheesecake has reached room temperature, refrigerate at least 3 hours.
Top with Chukar® Cherries Jubilee and serve.
