Protein Pancakes with Cherry Topping

A tasty breakfast with long-lasting energy. 

Ingredients

  • 1 cup quick oats
  • 1 teaspoon baking powder
  • 1 tablespoon brown sugar
  • 2 eggs
  • 1\/2 cup whole milk Greek yogurt
  • 1 teaspoon vanilla
  • 2 tablespoons whole milk
  • Chukar® Sour Cherry Topping

Directions

Oil and preheat pancake griddle.
Place oats in a blender or food processor and pulse until the oats are just slightly coarser than flour. Add the baking powder and brown sugar. Combine well.
In a small bowl beat together the eggs, yogurt, vanilla, and whole milk. Combine with dry ingredients until just evenly moistened. Batter may be lumpy.
Test griddle heat by flicking a few drops of water on the hot surface. If it sizzles, the pan is ready. Pour ¼ cup of the pancake batter onto the griddle. Cook until small bubbles form across surface of pancake, then flip finish cooking.
Top pancakes with a dollop of Chukar® Sour Cherry Topping.
