Pumpkin Cherry Bread

Ingredients

  • 1 cup Chukar® Tart Cherries Lightly Sweetened
  • Orange juice, for soaking cherries
  • 3 cups sugar
  • 1/2 cup butter
  • 1 cup vegetable oil
  • 4 eggs
  • 15 ounces (1 can) pumpkin purée
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1 cup chopped walnuts or pecans

Directions

  1. Pre-heat oven to 350° F.
  2. Place Chukar® Tart Cherries in a bowl and pour orange juice over the top. Allow the cherries to plump for about 15 minutes before draining.
  3. Meanwhile, beat together the sugar, butter, oil, and eggs. Mix well.
  4. Add pumpkin purée and vanilla. Mix.
  5. Add dry ingredients (flour, baking soda, baking powder, salt, nutmeg, and cinnamon) to the pumpkin mixture.
  6. Gently fold in drained tart cherries and chopped nuts (if desired).
  7. Pour into two greased full-size loaf pans.
  8. Bake for 60 minutes until tops are firm and bread is golden brown.
