Bison Burger with Cherry Aioli

Ingredients

Chukar® Cherry Aioli:
- 1 cup mayonnaise
- 1/3 cup Chukar® Cherry Pepper Jelly
- 1/2 teaspoon chili powder
- 1/2 teaspoon Kosher salt
- 1 tablespoon light brown sugar

Balsamic Red Onions:
- 2 tablespoons balsamic vinegar
- 2 tablespoons light brown sugar
- Kosher salt, to taste
- Fresh ground black pepper, to taste
- 1 teaspoon olive oil for coating sauté pan
- 1 red onion, thinly sliced

Bison Burger:
- 2 lbs. ground bison
- 6 buns (ciabatta bread works well), spread with unsalted butter
- 1/2 cup gorgonzola crumbles
- 1/2 head butter lettuce
Directions
- Chukar® Cherry Aioli:
- Combine mayonnaise, Chukar® Cherry Pepper Jelly, chili powder, salt, and brown sugar. Mix until smooth.
- Place in small dish and refrigerate until use.
- Balsamic Red Onions:
- Mix balsamic vinegar, light brown sugar, a generous pinch of salt, and fresh ground black pepper (to taste).
- Brush sauté pan with olive oil and turn temperature to medium high.
- Add sliced red onions to pan and top with vinegar mixture.
- Stir and continue to cook until onions start to caramelize.
- Bison burgers:
- Form six burger patties and cook to desired temperature.
- Broil buttered buns until lightly toasted.
- Top burgers with cherry aioli, balsamic onions, gorgonzola crumbles, and lettuce.
- If you have leftover aioli, it makes a delicious dip for fries!
